Is heat soak possible while moving down the highway at 80mph? Have only heard about it while stopped at a light.

I do a lot of driving in Yuma, AZ. It is freaking HOT here. The other day I was driving down the highway and all of a sudden the car felt like it had lost A LOT of power. Acceleration was slower and felt "lurchy"....like a AF mix, or something. No lights on dash. No indications that something was wrong.
It was about 105F and 95% humidity.
The car doesn't seem to do it as bad now (this was about 3 days ago) but humidity is much lower; mid 20's.
