Looks like 18x9.5 et45 with a 265 35 18 tire is about the max. you could probably going with a 48 offset and fit a 275.

Do you know what's the largest width tire that can fit on the stock 18x8.5 et55 rims without rolling fenders?

I am running JIC 18x9.5s 45 offset, 275 35R18s, and the fronts clear fine. The rears need a small amount of out fender roll. Not a lot, just a touch near the 9 o-clock position.

I suspect that 265s on the same wheels would clear perfectly.

Do you know if a 255 width tire, with 9.5in rim 38 offset would fit? If not, what tire (if any) would fit with that rim?

The whole idea is to get the most tire under your car. Going the "euro stretch look" is going to get shot down faster than a zero. If a slight roll or different offset rim is going to get you a 275 under your car, than anything else would be a waste of time.
