Seems like I got it fixed.

I popped off the radiator cap at lunch and just poured some water in there and the overflow(was below the "low" line but literally just below it). Ran the car up to temp and then put the cap back on the radiator. Took it out during lunch and go on it. Didn't see anything higher then 190degF and the fans were coming on. I will continue to watch it, but hopefully that fixes it.

Car may have drawn the needed fluid out of the coolant res as they're supposed to do that themselves as they cool. How much did you need to add to the rad?

I didn't add much. You could see the fluid at the top. Maybe 16oz if I had to guess. But I did fill up the reservoir to probably an inch below the full line.

I get the car up to temp, then turn the heater on, and hold RPMs a little higher than idle. This pushes the bubbles out of everything usually. Doing all this with the upper reservoir cap off.

I had the heater on, but didn't rev it. The car is a bit loud now, so doing that in a professional environment isn't the smartest thing.
