those of you who leave your AP in your car, where and how do you mount it?

Most use those cheapy universal cell phone holders you can buy at local auto-zones. Something along the lines of this...

cell phone mount. but it would be better to relocate the OBD port completely to somewhere less stupid and then hide the usb wire.
