Default clutch fluid?

simple question.....how often should the clutch fluid be replaced? I recently did my 30,000 service with new transmission fluid and rear diff but didn't touch anything with the clutch

I think you are talking about the clutch master cylinder and slave cylinder, correct? If so, then your really don't need to replace it as much as bleed the system so that there are no air bubbles or pockets in the clutch line. There is no specific interval, but I have always done this when replacing the transmission fluid. Its very similar to bleeding brakes and it is a two person job, but can be done by yourself...although I would never do it by myself.
